NADAN TOMATO CURRY

Nadan tomato curry is a very simple and appetizing cuisine  of  South India. It can be prepared using minimum ingredients which are usually available at home and can be served with steamed rice.

INGREDIENTS

Tomato: 4 in number

Turmeric powder: 1/4 tsp

Chili powder : 1/2 tsp

Salt: as required

Coconut shreds :half cup

Mustard seeds :1/3 tsp

Cumin seeds :1/4 tsp

Green chili :2 in number

Yogurt :1 cup

Curry leaves :4 to 5 in number

Coconut oil   :2 tbsp.

Fenugreek seeds :1/3 tsp

INSTRUCTIONS

STEP 1: Heat oil in a pan, add tomatoes, chilly powder, turmeric powder, green chili and salt. Cook it in medium flame till the tomatoes are properly cooked.

STEP 2: In a blender combine together grated coconut/coconut shreds, cumin seeds,  mustard seeds and sufficient quantity of water to form a smooth paste. Keep aside until required.

STEP 3: Once the tomatoes are cooked, transfer the coconut paste and mix it well. Cook it for 2 to 3 mins till the raw smell remains.

STEP 4: Add 1 cup yogurt and mix it well. Do not allow it to boil once yogurt is added.

STEP 5: For seasoning, heat oil in a pan, add mustard seeds let it splutter and  then  add fenugreek seeds, curry leaves  and finally add it to the recipe.
