Thottuvaratti(Healthy mixed pulses dosa)

Dosa is a very popular staple food of Southern India.Although they originated in South India as a breakfast food, dosas have become so popular that they are served at all times of day throughout India. Dosas were prepared with fermented rice in the past, but with the passage of time, people started to add urad dhal, black dhal, lentils, and pulses to give a better taste. All are familiar with varieties of dosas which are available in different restaurants like masala dosa, plain dosa, set dosa, mysore masala dosa etc. Today, I would like to share with you an unique dosa recipe that my mom used to prepare infrequently. I would recommend onion chutney as a combo for this dish.Please try it out and let me know your feedback in the comments.

INGREDIENTS:

Raw rice/pachari :1/4 cup
Urad Dhal :1/3 cup
Toor Dhal :1/4 cup
Moong Dhal :1/4 cup
Black chickpeas :1/4 cup
Dried red chilly :3 to 4 in number
Small onion :4 to 5 in number
Coconut shreds: 2 to 3 teaspoon
Asafetida :1/2 tsp
curry leaves :4-5 leaves
turmeric powder :a pinch for the colour
Salt as per taste
Ghee for frying

HOW TO MAKE DOSA BATTER:

STEP ONE: Soak rice and other pulses together for 6-7 hours or overnight in water.

STEP TWO: Grind these with curry leaves, small onions cococut shreds and dried red chilies by adding water little by little.
Note:(Should not be grinded into a finer paste like normal dosa batter, rather should be little coarser.)
STEP THREE: Transfer the batter into a container and add half teaspoon asafetida, turmeric powder and salt as per requirement.

HOW TO MAKE DOSA:

STEP FOUR: Heat a flat tava/dosa kallu and grease it with a teaspoon of ghee.

STEP FIVE: Pour a ladle full of dosa batter in the center and spread with back of ladle to a small round(NB: should not be too thin).

STEP SIX: Pour a teaspoon of ghee over it. Put it in medium sim and cook for 2-3 min, when it turns crispy turn on to the other side.

STEP SEVEN: Serve hot with onion chutney or any other chutney of your choice.
